Food additive E330 is a citric acid, which refers to organic acids and is a natural preservative. This is a weak tribasic acid, which is a substance of a crystalline structure, which has a white color. Additive E330 is highly soluble in water and ethyl alcohol and slightly soluble in diethyl ether.

The molecular formula of citric acid is C6H8O7. Esters and salts of citric acid are called citrates. Lime acid is widely used in the food industry, the production of detergents, as well as in cosmetology and pharmacology.

Citric acid and citric acid salts, such as potassium citrate, sodium citrate and calcium citrate are food additives used to regulate acidity, enhance flavor, and also as a preservative. Especially widely the additive Е330 is applied at manufacture of drinks, confectionery and bakery products. In the latter, the E330 additive is often used as one of the components of baking powder or “improver” test. In combination with alkalis, for example baking soda (E500), the E330 additive reacts violently with the release of carbon dioxide, which gives the test fluorescence and airiness.
